Long-term docs updates

Will need to make a few decisions moving forward once we are in a more complete state:

• Will we merge everything from my fork into this original repo or create completely new repo in plenoptic org?
• If the latter, how do we want to deal with PR history from my fork?
• We will also need to change the name and link in readthedocs to wherever this all ends up
